Turkish cuisine

Turkish cookery has formed under the influence of traditional cuisines of nomad Turks, as well as Greeks, Arabs and south Slavic nations. The highest priority is given to beef and mutton. A large amount of meat dishes is made on a barbecue, and all of them are united by one term – kebab. Typical Turkish dishes are doner and kebab which is a variety of the well-known shish kebab. Another meat dish is tandir kebab, which is a whole carcass of a sheep baked on a fire in a hole dug especially for this purpose. When preparing kebabs local cooks are guided mainly by the centuries-long experience of their predecessors. Among the varieties of kebabs that are necessarily prepared on open fire or coal, and in some cases in crockery but without water are shish kebab, doner kebab, which is very much like shawarma, but is less juicy. To distinguish the various Turkish kebabs the names of villages and places where they first were made are used (for example, adana kebab, which is chopped mutton spiced with red pepper and vegetables, or bursa kebab, which represents mutton flavored with a lot of onion in such a way that the meat acquires a unique aroma. Another popular meat in Turkey is chicken of course. But still, the major meal for New Year celebration remains turkey stuffed with pilat and chestnuts.
An important role is played by desserts in Turkish cuisine. They have special exotic names; the most famous of them is baklava, although there are many other popular desserts. Like in other countries, the most popular drinks are tea and coffee.
In general, Spanish meals are plain, but due to the spices like saffron they are rich with delicate taste. As a special flavouring for soups and salads olive oil is used. It is considered to be the most useful of all oils for the human organism.
