Romanian cuisine

Romanian cuisine is very unique and diverse. It took centuries for it to take the shape of what it is now. Its peculiarities are determined by both natural conditions and the history. Romania is divided into six historical provinces: Transylvania, Muntenia, Dobrudzha, Moldova, Oltenia, Banat – in each of these provinces the ways of cooking food were somewhat different. For example in the province of Moldova sour-cream is added to soups only before they are served, and in the southern part of Transylvania it's added during the process of cooking. Romanian cuisine has experienced the influence of both western and eastern traditions, that's why it has many things that have been borrowed from other countries' national cuisines. This is especially true for border areas. On the other hand, there are many dishes in bordering countries whose names are similar to the names of Romanian ones. In their cookery Romanians tend to use ingredients that slow down the process of spoiling of products. A lot of vegetables, fruits, eggs, milk products are also used. Probably that's why Romanian dishes always preserve the natural smell and taste. Preparing food on moderate fire is characteristic for Romanian cuisine, as well as the fact that some ingredients (if they are supposed to be boiled) are boiled only as much as they become soft enough. Romanian cuisine is represented by a wide variety of meat dishes: gammon, brisket, cold baked pork, bacon, breast, sausages. Popular desserts in Romania are pască, plăcintă, home-made patties etc.
