Mexican cuisine

Mexican cuisine is very unique. The history of modern Mexican cuisine totals more than thirty centuries and has preserved hundreds of recipes of unique and delicious dishes. This culinary tradition has its roots even in the ancient civilizations of Aztecs and Mayas. It is generally based on the rich variety of products available for these nations: maize, avocado, fresh and dried beans, sweet and usual potatoes, tomatoes, capsicum chili, pumpkins, duck and turkey meat, chocolate, as well as a lot of kinds of fish that lives in Mexico's coastal waters.
The basis for many Mexican means is maize. The oldest finds in Mexico prove that maize was grown and processed there as early as 1400-2300 before Christ. Native dwellers used not only the seeds of the plant, but also other parts of it to prepare soup. Unlike Mexicans, ancient Peruvians did not make flour from maize and didn't bake dry shortbreads, but boiled and roasted whole seeds and ate them just like that.
The most typical Mexican meals today are the following: tacos (maize tortilla with beef, pork, beans or shellfish), burritos (wheat bread stuffed with grill meat, vegetables, and other stuffings), posole (soup with fried maize with pork, chili and spices served with pieces of lemon, onion, avocado), tortillas, tapas, chili, chili con carne (ragout with hot taste made from small pieces of beef, haricot, pepper and spices), fajitas, tamale, salsa, mole, guacamole, cocoa and chocolate, mole, guacamole, horchata, pulque, tequila.
In general, Spanish meals are plain, but due to the spices like saffron they are rich with delicate taste. As a special flavouring for soups and salads olive oil is used. It is considered to be the most useful of all oils for the human organism.
Indian cuisine is one of the oldest, the richest and the most diverse cuisines in the world. An Indian meal usually consists of snacks, for example salads, then main course, pastas and bakery called chapati, which is eaten with vegetables and rice.
